      Angie-What a festive risotto to have for the Christmas holiday. I love beets, but have never incarporoted it in risotto. I can imagine how delicious it turned out.With my recent post of the farfalle with basil pesto, and your beet risotto, that would make a lovely pair at a holiday party…just a thought!
