Red Lentil Soup W Baked Indian Papadams

AMT UNIT INGREDIENT DESCRIPTION
3 Tbsp Ghee/Olive Oil
1 Large Onion Minced
1 pc carrots Cubed
1 pc Sweet Potao Cubed
3 cloves Garlic Minced
1 Tbsp Ginger Grated
1 Tsp Yellow ginger Grated
2 tsp Coriander Powder
1 tsp Cumin Powder
1 tsp Parika
0.25 tsp Cinnamon Powder
Salt & Pepper
8 cups Vegetable Broth (low sodium)
1 cup crushed tomatoes
2 cups Red Lentils Washed, drained
4 Tbsp Lemon Juice
1 pc Dried Chilis or Chili Flakes
Corinader Leaves For Garnish
Parsley Leaves For Garnish
6 sheets Papadam
STEP PREPARATON
1 In a soup pot saute vegetables w/ spices.
2 Pour Vegetable broth and add lentils. Simmer for 10-15 mins
3 Once boiling add lemon juice and remove from heat remove from heat, set aside
4 In baking pan lined with parchment paper place papadams and bake Bake for 10-15 mins in 350 F
5 Remove papadams from oven and serve w/ Red lentil soup
